Ingredients
  1. Base;
  2. 1/2 cup of shredded coconut
  3. 1 cup of almonds
  4. 8 dates
  5. 1 tbs coconut oil
  6. Filling;
  7. 2 cups of cashews (soaked overnight)
  8. 1/2 cup of coconut cream
  9. 1 lemon - juice and rind
  10. 2 tbs coconut oil
  11. 1 tsp vanilla extract
  12. Topping
  13. 4-6 passionfruit (depending on size)
  14. 1 tbs chia seeds
  15. 1 tbs coconut water or water
Instructions
  1. Combine chia and coconut water.
  2. Mix all ingredients for base in food processor until well combined and press into lined cake tin (I used 20cm pan).
  3. Mix all ingredients for filling until smooth.
  4. Pour into base.
  5. Mix chia and passionfruit and spoon onto top of cake.
  6. Place in freezer to set for at least 2 hours.
