Fresh mango and passionfruit raw food dessert that is easy to prepare. Free from dairy, gluten, grains, egg and refined sugar.

Ingredients
- Base;
- 1 cup almonds
- 1 cup shredded coconut
- 6 dates
- pinch of salt
- Middle layer;
- 2 large mangos
- 2 cups of cashews (soaked over night)
- 1 cup coconut cream
- 1/4 cup maple syrup (you can add an extra 1/4 cup if you like it to be sweeter)
- 1 tsp vanilla
- 1 lemon - juice and rind
- Topping;
- 6-8 passion fruits (depends on the size)
- 1 tbs chia seeds
- 1 tbs water
Instructions
- Combine ingredients for topping and set aside.
- Place all ingredients for base in food processor and blend for 5-10 sec. See pic for consistency.
- Press into lined cake tin.
- Keeping one mango aside place all ingredients for middle layer in food processor and combine until smooth.
- Pour half onto base and then top with sliced mango.
- Pour remaining mixture over mango and use a spoon to smooth over the top, making sure the layer is evenly spread.
- Top with passion fruit and chia mix.
- Place in freezer to set for at least 3 hours.
- Remove from freezer 30 minutes before serving.
Notes
- This raw food dessert can be served as a cake or a slice.
