Cauliflower and pumpkin soup

Simple and delicious soup.

Ingredients
- 1/2 cauliflower head broken into florets
- 1 butternut pumpkin
- 2L chicken stock
- 2 cloves of garlic grated
- 1 tbsp of coconut oil
- 1 tsp of powdered cumin
- 4 tbsp of coconut our sour cream
Instructions
- Preheat oven to 180'C
- Coat cauliflower florets with coconut oil and cumin.
- Place on oven tray next to whole pumpkin.
- Bake 1 hour.
- Bring stock to boil and add garlic. Simmer for 5 minutes.
- Peel skin off pumpkin and scoop out flesh.
- Add cauliflower and pumpkin to stock and blend till smooth.
- Add a spoonful of coconut or sour cream.
