Healing chicken soup

The first thing I turn to when my children are sick.

Ingredients
- Broth;
- 2l water
- 1 whole chicken
- 8-10 cloves of garlic, peeled and grated (the more the better)
- 2 large cubes of ginger (peeled)
- 2 onions, thinly sliced
- salt and pepper to taste.
- 2 cups of green veg – I usually use bok choi but this version I used broccoli as its my children’s favourite.
- 1 pack glass noodles or zucchini noodles (zucchini cut into thin strips)
- 1 teaspoon fish sauce per bowl
- 2 limes
Instructions
- Place water, chicken, onion, 5 cloves of garlic, salt and pepper a in large pot. Boil for 2 hours.
- Add remaining garlic and broccoli, simmer for 5 more minutes.
- Cook noodles separate according to instructions (cooking times vary depending on brand). Rinse in cold water to prevent the noodles sticking together.
- If using zucchini noodles, no need to cook separately. Pouring hot stock over the top of the zucchini noodles is enough to cook them.
- Place noodles in bowl. Pour hot stock over the top, add meat and vegetables from soup pot.
- Add fish sauce an lime juice and serve.
Notes
- This is my child friendly version. For adults I use more asian greens or kale and I add fresh chilli, bean spouts, coriander and asian basil.
- Cooking this soup with a whole chicken and for 2 hours creates a stock (or bone broth) that if full of healing nutrients.
- Chicken soup has been used for generations as a traditional healing remedy. I cook up a batch of this for my family as soon as they are sick. In summer or winter for colds, flus or tummy bugs this it the first recipe I turn to.
- Why is it healthy?
- Garlic - antibiotic, immune boosting properties.
- Ginger - anti-inflammatory, good for digestion and nausea
- Onion - contain properties valuable for treating coughs, colds and tummy problems
- Green vegetable - high in vitamins and antioxidants
- Stock - or bone broth. I need a whole article for the benefits of bone broth but over all its hydrating, and contains important nutrients for digestive and immune health.
- Whole chicken - when making stock it is important to use bones, joints and skin. By using the whole chicken in this way and cooking for 2 hours, you extract all the nutrients important for immune health.
