Healing garlic, turmeric and ginger chicken soup

Ingredients
- Stock;
- 1 whole chicken
- 2 large onions - peeled and roughly chopped
- 1 bulb garlic - peeled and diced
- 2 L water (you may need to top up with water after 2 hours)
- pinch of pepper and sea salt
- Soup;
- 2 tablespoons grated ginger
- 6 cloves of garlic, peeled and grated
- 1-2 tbs turmeric
- 2 cups of asian greens
- 3 limes
- 2 tbs fish sauce
- 4- 6 teaspoons of coconut oil
Instructions
- Make stock - Place chicken in large pot with water, onion, 1 bulb garlic, salt and pepper. Bring to boil and then turn heat down to simmer for 3 hours (longer if you have the time).
- Soup - After making the stock add ginger, turmeric, extra garlic to stock and simmer for 5 minutes.
- Add greens and fish sauce and take off heat.
- Pour into separate bowls, distributing chicken (leaving bones in pot) and greens evenly.
- Add a teaspoon of coconut oil and fresh lime juice to each bowl.
- Serve!
- Optional - fresh chill - great for colds, flu or sinus congestion
