Garlic prawn, basil and lemon zucchini pasta

Ingredients
- 300gm prawns peeled
- 4-6 cloves of garlic chopped into small chunks (I love garlic so I use)
- 2 tablespoons of coconut oil or olive oil
- 2 tablespoons of water
- 1 lemon (rind and juice)
- small bunch fresh basil
- 2 zucchinis peeled into strips for pasta
- salt (to taste)
- Optional
- 1 tablespoon Camu camu powder (Biolglan)
- chilli
Instructions
- Add garlic and coconut oil to pan and cook on a low heat for 5 minutes. As oil reduces add water to prevent garlic from burning.
- Increase to moderate to high heat.
- Add rind of lemon and prawns. Cook for approx 4 minutes and lemon juice and cook on high until prawns are cooked.
- Add basil, salt and camu camu powder and stir through.
- Cook zucchini in a separate pot of boiling water for 2 minutes (making sure not to over cook)
- Drain water and add zucchini to prawn mix, stir thoroughly and serve.
- Option - if you like chilli add to pan a few minutes before prawns are finished.
- Enjoy!
