Ingredients
  1. 300gm prawns peeled
  2. 4-6 cloves of garlic chopped into small chunks (I love garlic so I use)
  3. 2 tablespoons of coconut oil or olive oil
  4. 2 tablespoons of water
  5. 1 lemon (rind and juice)
  6. small bunch fresh basil
  7. 2 zucchinis peeled into strips for pasta
  8. salt (to taste)
  9. Optional
  10. 1 tablespoon Camu camu powder (Biolglan)
  11. chilli
Instructions
  1. Add garlic and coconut oil to pan and cook on a low heat for 5 minutes. As oil reduces add water to prevent garlic from burning.
  2. Increase to moderate to high heat.
  3. Add rind of lemon and prawns. Cook for approx 4 minutes and lemon juice and cook on high until prawns are cooked.
  4. Add basil, salt and camu camu powder and stir through.
  5. Cook zucchini in a separate pot of boiling water for 2 minutes (making sure not to over cook)
  6. Drain water and add zucchini to prawn mix, stir thoroughly and serve.
  7. Option - if you like chilli add to pan a few minutes before prawns are finished.
  8. Enjoy!
