Lime, coconut and ginger 'cheese' cake

Yummy, fresh raw food dessert

Ingredients
- Base;
- 1 cup shredded coconut
- 1/2 cup of almonds
- 6 dates
- 1 tbsp coconut oil
- 1 tbsp chia seeds
- 1 - 2tbsp powdered ginger
- Filling;
- 3 cups of cashews (soaked over night)
- 1/4 cup coconut cream
- 1/4 cup maple syrup
- 1/2 lemon juiced
- 3 limes (juice of 3 and rind of 2)
- 1 tsp vanilla extract
Instructions
- Blend ingredients for base in food processor until well combined
- Press into lined cake tin
- Combine all ingredients for filling in food processor until smooth and creamy.
- Layer on top of base.
- Place in fridge or freezer to set for at least 2 hours.
- Sprinkle with rind from one of the limes.
