Blackberry and orange almond cake

Quick and easy dairy free and gluten free cake.

Ingredients
- 2 oranges (juice and rind)
- 3 eggs
- 2 1/2 cups of almond meal
- 1/2 cup coconut oil, melted
- 3/4 cup of rice malt syrup
- 1 tspn vanilla extract
- 1 tspn gluten free baking powder
- 1 1/2 cups black berries
Instructions
- Mix melted coconut oil with orange rind, vanilla, rice malt syrup, orange juice and almond meal.
- Add eggs and mix until well combined.
- Add baking powder.
- Pour mixture into greased cake tin.
- Add berries to top of raw cake mix, pressing some into cake.
- Place in oven and cook for 50 mins at 180'C
Notes
- Option - serve with coconut cream or orange syrup.
- Combine one sliced orange, 1/2 cup of water with 2 tablespoons of rice malt syrup. Stir well. Place in oven in an oven proof dish at the same time as cake. Remove when cake is cooked and pour over cake before serving.
