Chicken, vegetable and black eyed pea soup

Perfect in winter - this delicious soup is easy to make and full nutrients.

Ingredients
- 1 large brown onion
- 5 cloves of garlic
- 1 tablespoon smoked paprika
- 1 tablespoon of oregano
- 1 cup of mushrooms sliced in half
- 1 carrot cut in chunks
- 2 cups of black eyed peas (soaked over night)
- 1 cup of diced pumpkin
- 200gm chick thigh fillets
- 2 litres of chicken stock
Instructions
- Melt coconut oil on a low heat. Add onion and garlic, stir until cooked. Add mushrooms, paprika and oregano cook for 2 minutes.
- Add stock, pumpkin, peas and chicken. Simmer for 25 minutes or until pumpkin in cooked through.
- Add kale and cook for an extra minute.
- Add salt to taste.
