Cacao chip banana bread

Lunch box banana bread thats not too sweet and high in protein to fuel your little ones for their busy day. Adults will love it as well.

Ingredients
- Wet ingredients
- 4 very ripe bananas
- 3 eggs
- 6 medjool dates
- 4 tablespoons of tahini
- 2 table spoons coconut oil or butter
- Dry
- ¼ cup mixed seeds (I use chia and sunflower)
- 1/2 cup of shredded coconut
- ½ cup of coconut flour
- ½ cup cacao nibs
- 1 tbs cinnamon
- vanilla
- 1 tspn baking powder
Instructions
- Preheat oven to 180'C
- Place all wet ingredients in food processor (except for half a banana) and mix for about 10 seconds on high.
- Add all dry ingredients and stir through until well combined.
- Pour into greased/lined baking tray. Top with sliced banana.
- Cook for approximately 50 minutes.
Notes
- You could increase dates if you like it to be sweeter but I think its nice just the way it is.
- If you are not using it for lunch boxes you can add 1/4 cup of walnuts.
