Mexican inspired breakfast that is easy to make and full of flavour

Ingredients
- 2 organic eggs
- 3 tomatoes diced
- 1 onion diced
- 2 cloves of garlic crushed
- 1 tbsn olive oil
- pinch of salt
- small bunch of fresh herbs - oregano, parsley or coriander
- 1 red chilli (optional)
Instructions
- Saute onion, garlic, olive oil and tomato in pan until well cooked (I cook on low for approx 10 minutes)
- Crack eggs into mixture and cover for 3 minutes.
Notes
- Option -
- add half a cup of chopped kale or baby spinach and half a capsicum
