Lemon, coconut and raspberry pudding

Perfect for breakfast or dessert -quick to prepare and super healthy.

Ingredients
- 1 small banana
- 1 lemon (juice and rind)*
- 2 eggs
- 2 dates
- 4 tbsp shredded coconut
- 2 tbsp coconut flour
- 1 tbsp coconut oil
- 2 tbsp honey
- 1/2 tsp vanilla extract
- pinch of cardamon
- 1/3 cup raspberries (more if you can fit them)
Instructions
- Place all ingredients except raspberries in food processor and blend till smooth (only need a few seconds).
- Pour into ramekin.
- Press berries into mixture.
- Cook for 20mins at 180'C.
Notes
- Option - this is still an easy recipe if you don't have a processor. Just whisk egg, mix with mashed banana and other ingredients to achieve the same results.
- * I love lemon but if you prefer the flavour to be less tart just use half a lemon.
