Raw caramel, cinnamon and walnut slice topped with fresh figs

A delicious raw food dessert that is easy to make.

Ingredients
- Base;
- 1 cup of walnuts
- 1 1/2 cups of shredded coconut
- 1/2 cup almonds
- 8 dates
- 2 tbs coconut oil
- 2 tspn cinnamon
- Cream layer;
- 2 cups of cashews soaked overnight
- 1 cup coconut cream
- 1/3 cup honey
- 1 tsp vanilla extract
- 1 orange juiced
- 1 punnet of fresh figs (4-6 depending on size)
Instructions
- Combine ingredients in food processor and pulse until mixture sticks together.
- Press into lined cake tin.
- Place all ingredients into food processor and mix until mixture is smooth and creamy. Add extra cinnamon or honey if desired.
- Pour over base and place in freezer for at least 4 hours.
- Remove from freezer 15 minutes before serving and top with sliced figs.
Notes
- You can replace the figs with bananas, blue berries or strawberries.
