Beef and Mushroom San Choy Bow

Whole food, family friendly dinner. Its my healthier, whole food version of the store bought kits for San Choy Bow and I think its just as easy to make.

Ingredients
  1. 400gm good quality beef mince
  2. 2 cups of mushrooms, sliced
  3. 1 onion, chopped
  4. 4 cloves garlic, grated
  5. 2 large pieces of ginger, grated
  6. 1 carrot, chopped into small pieces
  7. 1/2 cup cauliflower, chopped into small pieces
  8. 1/2 cup asian greens, sliced into thin strips
  9. 1/2 cup macadamia nuts chopped to small pieces
  10. 1/2 cup chia seeds
  11. 1 tbs coconut oil
  12. 1/4 cup water
  13. 3-4 tbs tamari or soy
  14. 1 tsp five spice
  15. 1 tbs honey
  16. Fresh lime
  17. 1 large Romain lettuce, washed, base sliced off and leaves separated.
  18. Optional - add 1 tbs. molasses (it does add extra sugar but its low GI and also high in vitamins)
Instructions
  1. Place coconut oil, onion, garlic and ginger in a warm pan and cook on moderate heat for 2-3 minutes.
  2. Add beef mince and cook until brown.
  3. Add mushrooms, carrot, cauliflower and water and cook for approx. 3 mins.
  4. Stir through tamari, honey and 5 spice.
  5. Top with asian greens and stir through.
  6. Take off heat.
  7. Sprinkle with macadamias and chia.
  8. Spoon into lettuce cups with a squeeze of lime and serve.
