Choc banana custard (healthy version of Yogo)

Healthy banana chocolate custard. Great after school snack for the kids.

Ingredients
  1. Custard
  2. 1 1/2 cups of milk or coconut milk (the coconut milk version is much richer)
  3. 2 dates chopped into small pieces
  4. 2 tbs of maple syrup
  5. 3 egg yolks
  6. 1/2 tsp vanilla extract
  7. 1 tspn gluten corn flour
  8. 1 banana, chopped
  9. 1 tbs raw cacao powder
  10. 1 tbs chia
Instructions
  1. Combine all ingredients for custard in pot.
  2. Bring to boil and then simmer for 15 minutes, stirring occasionally.
  3. Pour half of custard into a separate bowl, combine with chopped banana.
  4. Add cacao to remaining custard and stir until well combined.
  5. Allow to cool and layer in glass jar or cup.
  6. Sprinkle with chia.
Notes
  1. I use a Bellini (Similar to a thermomix) so I blitz for 3 seconds then set to 80'C, stirring speed 3 for 15 minutes.
  2. Option - you can add another spoon of cacao for a richer chocolate flavour but remember that while its high in antioxidants it also has energy boosting properties.
  3. If you like it sweeter you can add a date or an extra spoon of maple syrup but I think its sweet enough as it is.
