Fast food lunch - chicken and beetroot salad.

Super easy lunch or dinner. No excuse for healthy eating.

Ingredients
- 2 chicken breasts (sliced in half horizontally, lightly salted)
- Salad
- 1 beetroot - skin removed
- 1 green apple - core removed
- 2 carrots
- 1 cup baby spinach
- Dressing
- Juice of 1 lemon
- 1 clove of crushed garlic
- 1 tbpn tahini
- 1/4 cup olive oil
- pinch of salt
- Topping - pick one or all
- Goats cheese or feta
- Walnuts and/or Chia seeds
- Avocado
Instructions
- Lightly sprinkle salt and pepper over chicken.
- Place chicken on hot pan and cook for 5 minutes. Start with a high heat for 1 minute then turn down to medium heat and turn, cook for another 5 minutes.
- While you are cooking the chicken place remaining salad (except baby spinach) and dressing ingredients in food processor. You will only need 5 -8 seconds to chop ingredients.
- Layer on top of spinach.
- Allow chicken a few minutes to rest when you take it off heat.
- Sprinkle with topping and mix well.
Notes
- If you don't have a food processor you can easily use a grater for the carrot, beetroot and apple.
