Raw lemon and passionfruit cheesecake

Ingredients
- Base;
- 1/2 cup of shredded coconut
- 1 cup of almonds
- 8 dates
- 1 tbs coconut oil
- Filling;
- 2 cups of cashews (soaked overnight)
- 1/2 cup of coconut cream
- 1 lemon - juice and rind
- 2 tbs coconut oil
- 1 tsp vanilla extract
- Topping
- 4-6 passionfruit (depending on size)
- 1 tbs chia seeds
- 1 tbs coconut water or water
Instructions
- Combine chia and coconut water.
- Mix all ingredients for base in food processor until well combined and press into lined cake tin (I used 20cm pan).
- Mix all ingredients for filling until smooth.
- Pour into base.
- Mix chia and passionfruit and spoon onto top of cake.
- Place in freezer to set for at least 2 hours.
