Ingredients
  1. 1 small banana
  2. 1 lemon (juice and rind)*
  3. 2 eggs
  4. 2 dates
  5. 4 tbsp shredded coconut
  6. 2 tbsp coconut flour
  7. 1 tbsp coconut oil
  8. 2 tbsp honey
  9. 1/2 tsp vanilla extract
  10. pinch of cardamon
  11. 1/3 cup raspberries (more if you can fit them)
Instructions
  1. Place all ingredients except raspberries in food processor and blend till smooth (only need a few seconds).
  2. Pour into ramekin.
  3. Press berries into mixture.
  4. Cook for 20mins at 180'C.
Notes
  1. Option - this is still an easy recipe if you don't have a processor. Just whisk egg, mix with mashed banana and other ingredients to achieve the same results.
  2. * I love lemon but if you prefer the flavour to be less tart just use half a lemon.
